Pineapple salsa is great in the summer and is best served with BBQ chicken or fish.
1 cup finely chopped Pineapple
2 Tbsp finely minced Onion (sweet white or red)
3 Tbsp chopped Cilantro or Mint
1 Serrano Pepper, seeded and chopped
Combine the ingredients in a bowl. Cover and refrigerate for at least an hour. Serve on top of BBQ chicken or fish!
