Vanilla Pudding

Ingredients:

2 cups milk
1/4 cup white sugar
3 Tbsp corn starch
1/4 tsp salt
1 tsp vanilla
1 Tbsp butter

Put the sugar, corn starch and salt into a saucepan, and mix together. Slowly add the milk while mixing it with a whisk. When fully mixed in, turn the heat on medium-high, stirring often. Do not let it come to a boil.Take the mixture off the burner when it is thick enough to coat the back of a metal spoon. Put into serving dishes to cool.

Variations:

1) A great idea is to put this inside a cooked pie shell and top with fruit (bananas especially).
2) Add 2 cups of cooked rice to create a tasty rice pudding.
3) Add cinnamon or Nutmeg to the mix to give it extra flavor.
4) Use it in place of custard for desserts.
5) Use only 2Tbsp corn starch and whisk in 1 egg yolk after taking it off the heat to added colour and richness.
